Portion Size: 1 cup of beans
Ingredients Quantity
Black beans, soaked over night & boiled until tender 3 cups
Paprika 1 tbsp
Cumin 1 tbsp
Coriander 1 tbsp
Chopped Onion 1 large
Garlic, peeled, slivered 3 cloves
Spinach, fresh 2 cups
Fresh Oregano 1 large bunch
Olive oil 3 tbsp
Salt 2 tbsp
How to get the good stuff:
In a large sauté pan, combine onion, garlic, oregano, cumin, coriander, paprika, olive oil and salt
Place the pan over medium heat and sauté the ingredients for 3-4 minutes until the onions are see through and soft
Add the black beans to the mix as well as 1 cup water. Bring the whole mess to a simmer and then let it simmer for 2-3 minutes.
Add your spinach and fold it all together until wilted.
