Cod, portioned into 6 oz pieces (preferably black)    32 oz
Olive oil                            2 tbsp
Salt                                2 tbsp

Method of Preparation 

Your oven is going to love this:  Preheat it to 350
Season the Cod with salt
Heat a heavy bottomed skillet over medium high heat until it is just smoking. 
Add oil and immediately add cod to the pan. Let it cook for 3-4 minutes on one side until golden brown. Then, place your fish in oven for 5-7 minutes until heated throughout but not overcooked.
Enjoy with a green salad or vegetable of your choice
