Scallops, cleaned                              32 scallops
Olive oil                                             2 tbsp
Salt                                                   1 tbsp

Who doesn’t love scallops!  Here is a simple but delicious way to prepare them

Season your scallops with salt then cover them with a paper towel to remove excess moisture.
Heat a heavy bottomed skillet over medium high heat until it is just smoking. 
Add the oil and immediately add scallops to the pan. Let cook 3-4 minutes on one side until golden brown. Then place in oven for 5-7 minutes until heated throughout.  
Scallops love company!  Add a green salad or some roasted veggies and make your diners smile
