Pork Belly, portioned into 3 oz pieces            12 oz
Shallot, peeled and sliced                               4 large
English peas                                                   8 oz
Mint, cut into long thin strips                          1 large bunch
Olive oil                                                          4 tbsp    
Salt                                                                 3 tbsp

Lets get this going!

Preheat your oven to 350
Grab a pan and place it over medium high heat until just slightly smoking.  At the same time, salt your pork belly.  When the pan is ready,  add 2 tbsp of oil to the pan and then add the pork belly and brown on all sides, about 2 minutes on each side.
Finish cooking the belly in the oven for 4-5 minutes until it is cooked through. 
Remove the pork belly and let rest on a plate. Meanwhile, add the shallots and peas to your pan and sauté them for 4-5 minutes until the peas are tender and shallots are soft. 
Toss the peas w/ salt and mint and serve w/ pork belly.
