Portion size: 2 2 oz skewers

Ingredients                                     Quantity

Lamb Shoulder or leg                     1 lb
Onion, peeled and chopped            ½ each
Garlic, peeled                                  2 each
Paprika                                            1 tbsp
Cumin                                              1 tsp
Coriander                                         1 tbsp
Red Cherry pepper, chopped           1 each
Salt                                                   2 tbsp
Pepper                                              1 tbsp
Olive oil                                              2 tbsp
Skewers                                             8 each

Here we go:

Get that oven ready:  Preheat to 400.
Run all ingredients (excepting oil and skewers) through a sausage/meat grinder. Form the meat into 2.5 oz balls and then shape them into cylindrical shapes. Skewer each shape. 
Grab a heavy bottomed skillet and place it over high heat until it is lightly smoking. Add the olive oil to the skillet and then add the lamb. Let the skewers brown on one side for 2-3 minutes. Take the skewers and place them raw side up on a baking tray in the oven for 4-5 more minutes. 
Try not to eat them all at once!
