Sweet & Sour Sauce

Makes about 1 ¼ cups

This sauce is especially good simmered with chicken or pork.

3 tablespoons raw honey
1 tablespoon coconut vinegar or any SCD-safe vinegar without sugar (can be purchased in some health-food stores)
3 medium tomatoes, finely chopped
Salt and freshly ground pepper

  1. In a small saucepan over medium heat, heat the honey gently for few minutes. Add the vinegar and tomatoes; season to taste with salt and pepper. Simmer for 15 minutes or longer, adding a small amount of water if necessary, until the tomatoes have broken down and the sauce has thickened.
  2. Taste-test and add more vinegar or honey if needed.
