Ingredients                                                                     Quantity

Cauliflower, cut into small uniform pieces                      1 head
Lentil flour, fresh ground, French lentils                         ½ cup
Egg                                                                                1 each
Cheddar cheese                                                            ¼ cup + ½ cup
Oregano, fresh                                                              1 tbsp
Parmesan cheese, grated                                             4 oz
Jack cheese, grated                                                      ½ cup
Salt                                                                               1 ½ tbsp

Method of Preparation 

Get your oven ready go! Preheat to 350.
Grab your food processor and put the cauliflower pieces in and pulse until it is ground into cous cous sized pieces. Put the cauliflower onto a baking pan lined with parchment paper and place it in the oven for 20 minutes, until most of the moisture has evaporated.  Check it occasionally to make sure its not lonely and to mix it so that everything is evenly roasted.
Now:  Turn the oven up to 400
Combine the cauliflower, lentil flour, egg, ¼ cup cheddar cheese, 1 tbsp of salt, and oregano in a bowl and mix until everything is well combined. Put the mixture onto a parchment lined baking sheet. 
Lay a piece of parchment paper on top of the dough and roll the dough out, ¼ inch thick. Bake for 20 minutes, turning occasionally and making sure the edges don’t burn. 
Dust the crust with the Parmesan and jack cheeses before placing it in the oven to bake for another 5 minutes until the cheese has melted. Season with  salt before serving.
