Yield: 2 8” shells (or 8 3” biscuits)

Almond Flour                                                                  1.5 cups

Millet Flour                                                                       half a cup

Buckwheat Flour                                                              half a cup

Eggs                                                                                 2

Butter                                                                                4 oz

Salt                                                                                   1 tsp

Baking Soda                                                                     1 tbsp

Honey (if you are making a sweet treat)                          1 tbsp

Method of Preparation

  1. First things first:  Preheat your oven to 350.
  2. Add your flours, eggs, butter, salt, baking soda (and honey if you’re making a sweet treat) and mix until everything is combined well. Roll the dough into a ball and then wrap it in plastic and cool in the fridge for 15-20 minutes.  Wait patiently or snack on some fruits or veggies.
  3. Remove your dough from fridge and peel off the plastic wrap.   Place the dough in-between two pieces of parchment paper so you can roll it out into a 1/8” thick shape.
  4. Roll out the dough. When you’ve got it to 1/8” thick, stick it back into the fridge to chill for 30 minutes in the parchment paper. More snacking!
  5. After 30 minutes, grab your dough, remove the top layer of parchment and cut it in half.  Place one half back in fridge (this will be used for your second pie shell).  Place your dough upside down and lay it down gently into a baking pan, exposed side down. Peel away the sheet of parchment and check out your dough, looking for holes or uneven lumps, shapes.  When you are satisfied that you have perfect dough, let it hang out in your fridge until you’re ready to bake it. 
  6. Bake for 20-25 minutes in the oven until the crust has set.  Fill with something delicious!  EAT!
  7. (repeat step 5 for the second pie shell)
