Yield: 4 portions
Portion Size: 4 oz of braised shoulder

Ingredients                        Quantity

Whole Pork Shoulder         1.5 lb
Bay Leaves                        3 each
Salt                                     2 tbsp
Olive oil                              1 tbsp

Method of Preparation

Place a large skillet on medium high until the pan is just lightly smoking. Add the olive oil, wait until it is just heated and then add the pork shoulder to the hot oil (be mindful about oil splatters!  Ouch!) Let the pork brown on one side for 4 minutes. Heavily season the other side with the salt.
Cover your browned seasoned pork with water, add the bay leaves and place the entire pan on the stove.  Bring to a boil. Here is the easy part:  reduce to a simmer and let it simmer for 2 hours until the pork can be pulled off the bone with a fork.
Here is the hard part:  Don’t eat it right away but let it sit for at least 1 hour and up to overnight before removing from liquid and pulling.
Voila!  Eat!
