Caesar Salad
Makes 2 large salads
Feel free to dress up this salad with shrimp, grilled chicken, salmon, or other delicious ingredients such as nuts, sliced cucumber, or cherry tomatoes.
1 egg yolk
1/3 cup (1 ounce) grated Parmesan cheese
Juice of ½ lemon (about 2 tablespoons)
1 small clove garlic
1 teaspoon anchovy paste, or 1 small anchovy filet
½ cup olive oil
½ cup untoasted sesame oil
Coarsely ground black pepper
1 head romaine lettuce, chopped
- Combine the egg yolk, Parmesan, lemon juice, garlic, and anchovy paste in a food processor or blender. Pulse until a paste forms.
- With the motor running, slowly drizzle in the oils until the dressing thickens and emulsifies. Add ground black pepper to taste and process briefly to combine.
- Toss the lettuce with the dressing, garnish with any extras, and serve.
