Caesar Salad

Makes 2 large salads

Feel free to dress up this salad with shrimp, grilled chicken, salmon, or other delicious ingredients such as nuts, sliced cucumber, or cherry tomatoes.

1 egg yolk
1/3 cup (1 ounce) grated Parmesan cheese
Juice of ½ lemon (about 2 tablespoons)
1 small clove garlic
1 teaspoon anchovy paste, or 1 small anchovy filet
½ cup olive oil
½ cup untoasted sesame oil
Coarsely ground black pepper
1 head romaine lettuce, chopped

  1. Combine the egg yolk, Parmesan, lemon juice, garlic, and anchovy paste in a food processor or blender. Pulse until a paste forms.
  2. With the motor running, slowly drizzle in the oils until the dressing thickens and emulsifies. Add ground black pepper to taste and process briefly to combine.  
  3. Toss the lettuce with the dressing, garnish with any extras, and serve.
