Tuna Patties

Makes four 3-inch patties

2 (5-ounce) cans SCD-legal tuna in water only, drained
2 tablespoons finely chopped celery
2 teaspoons finely chopped onion
1 egg
Salt and freshly ground pepper
1 tablespoon butter

  1. In a medium bowl, mix the tuna, celery, onion, and egg. Season to taste with salt and pepper.
  2. Heat the butter in a small skillet over medium heat. Shape portions of the tuna mixture as you would hamburgers. Place the patties in the skillet. Gently flip the patties when browned on one side and cook the other side. They are done when browned on both sides.
