Pecan-Crusted Orange Roughy
Makes 4 servings
This is a family favorite! If you can't find orange roughy, cod, red snapper, or halibut will work great as substitutes.
1/3 cup almond flour (we prefer Honeyville)
1/8 to ¼ cup finely chopped pecans
1 teaspoon chopped parsley
½ teaspoon paprika
¼ teaspoon SCD-legal garlic salt
Dash regular salt
1 egg
2 tablespoons melted butter
4 fillets orange roughy
- Preheat the oven to 350°F. Grease a glass baking dish or a baking sheet with butter or olive oil and set aside.
- In a shallow bowl, mix the flour, pecans, parsley, paprika, garlic salt, and salt until well combined. Whisk the egg and melted butter in separate dish.
- Dip each fillet into the egg mixture, then into the flour mixture. Put into the baking dish. Bake for 20 to 30 minutes, or until crisp and golden brown.
