Sloppy Joe Mix

Makes 4 servings

All kids like Sloppy Joes, and this version is very tasty and satisfying. You can use it as an entrée (I like to serve it over cooked spaghetti squash or zucchini, or alongside any steamed or roasted veggie), or add several spoonfuls to scrambled eggs or omelets.

1 tablespoon olive oil
1 medium onion, finely chopped
1 pound good-quality ground beef
2 cloves garlic
½ teaspoon dried thyme, or 2 teaspoons chopped fresh thyme leaves
½ teaspoon dried sage, or 1 teaspoon chopped sage leaves
1 teaspoon paprika
Pinch of cayenne pepper
½ cup SCD-legal ketchup, or 3 medium tomatoes cooked with salt and your choice of herbs
Salt and freshly ground pepper

  1. Heat a large sauté pan over medium heat with the olive oil. Add the onion and cook, stirring occasionally until soft and golden brown. Add the ground beef and cook, stirring, until brown.
  2. Add the garlic, thyme, sage, paprika, and cayenne. Stir to combine. Add the ketchup or cooked tomatoes. Season to taste with salt, pepper, and more cayenne, if desired. Simmer for about 30 minutes, or until most of the liquid has evaporated.
