Pecan-Crusted Orange Roughy

Makes 4 servings

This is a family favorite! If you can't find orange roughy, cod, red snapper, or halibut will work great as substitutes.

1/3 cup almond flour (we prefer Honeyville)
1/8 to ¼ cup finely chopped pecans
1 teaspoon chopped parsley
½ teaspoon paprika
¼ teaspoon SCD-legal garlic salt
Dash regular salt
1 egg
2 tablespoons melted butter
4 fillets orange roughy

  1. Preheat the oven to 350°F. Grease a glass baking dish or a baking sheet with butter or olive oil and set aside.
  2. In a shallow bowl, mix the flour, pecans, parsley, paprika, garlic salt, and salt until well combined. Whisk the egg and melted butter in separate dish.
  3. Dip each fillet into the egg mixture, then into the flour mixture. Put into the baking dish. Bake for 20 to 30 minutes, or until crisp and golden brown.
