Halibut with Mango Salsa

Makes 2 servings

2 large ripe mangoes, cubed
1 large tomato, cubed
¼ small red onion, finely minced
1 large clove garlic, finely minced
1 lime, juiced (1½ tablespoons)
¼ cup olive oil
Salt and freshly ground pepper
½ bunch fresh cilantro, chopped
8 ounces halibut fillet, cut into two pieces

  1. To make the salsa, put all ingredients except the halibut into a large bowl; toss to combine. (This recipe makes more salsa that you will probably need for 2 servings, but it's so delicious and versatile that you'll enjoy using it in other ways.)
  2. Fill a pot with several inches of water (enough to submerge the halibut). Place over high heat. When it comes to a simmer, add the halibut, reduce the heat, and let it cook gently for 6 to 8 minutes, until cooked through.
  3. Remove the halibut, drain on paper toweling, and serve with the mango salsa.
