Fish Tacos

Makes about 6 tacos

This is a recipe I created when craving some good, healthy, SCD-friendly fish tacos. It helps so much to make a super-flavorful marinade for the fish and then to top the taco with an equally delicious, creamy, yogurt-cilantro sauce. Note that if your family prefers, this recipe works great using chicken or pork instead of the fish.

Sauce
2 cloves garlic
Juice of ½ lime
½ cup SCD yogurt
1 bunch fresh cilantro
2 green onions
1 roasted green bell pepper
Salt and freshly ground pepper
Marinade
1 tablespoon cumin powder
1 teaspoon paprika
1 handful fresh cilantro
2 whole garlic cloves, plus 2 minced cloves
Juice from ½ lime
Salt and freshly ground pepper
¼ cup olive oil
1 pound boneless tilapia or other white fish
Cabbage, shredded
6 SCD taco shells*

  1. To make the sauce, use a blender or food processor to blend the garlic, lime juice, yogurt, cilantro, green onions, roasted green pepper, salt, and pepper. Once creamy, set aside.
  2. To make the marinade, mix the cumin, paprika, cilantro, whole and minced garlic, lime juice, and a dash of salt and pepper in a small, shallow baking pan or pie plate. Add the olive oil and place the fish in the marinade, turning it until evenly coated.
  3. Heat the oven to 450°F. Cook fish (still in the marinade) for 10 to 15 minutes, depending on the thickness of the fillets. When flakey and opaque all the way through, use two forks to separate the fish into small chunks. Set aside.
  4. Heat several SCD tortillas (or use corn tortillas for family members who may prefer them). Add some shredded fish and shredded cabbage, top with a generous drizzle of sauce, and enjoy!

*Note: Your local supermarket may or may not carry ready-made, SCD-legal taco shells or tortillas. You can look online for them, or search for SCD-friendly recipes and make your own. Most use coconut flour, almond flour, cauliflower, or white beans as their base. Once you've found a recipe you like, it can be used to make taco shells, crepes, or even pizza dough.
