Warm Banana Pudding

Makes 1 serving

2 tablespoons coconut oil
2 ripe bananas
1 egg (optional)

  1. Set a medium pan on the stove over low heat. Warm the coconut oil, then mash and warm the bananas with the coconut oil. (You can always scramble an egg in for extra protein—my daughter calls it banana scramble.)
  2. Transfer the mixture to a wide-mouth thermos and you have a quick, nourishing snack for school lunches or to take "to go."
