Old-Fashioned Tuna Salad

We like to eat this on Parmesan-Herb Crackers made from Lucy's Specific Carbohydrate Cookbook from Lucy's Kitchen Shop online. You can also put this on a slice of her Parmesan-Herb Bread, sprinkle shredded Parmesan cheese on top, and brown the open-face sandwich in the toaster oven for lunch.
1 (5-ounce) can SCD-legal water-packed tuna
¼ cup homemade mayonnaise (more if you prefer)
1 tablespoon chopped celery
½ teaspoon chopped onion (more if you prefer)
Diced hard-cooked egg (optional)
Salt and freshly ground pepper
- Mix all the ingredients, season to taste with salt and pepper, and chill.
